BTW, it is a myth that seeds cause spiceyness in peppers. capsaicin, the stuff that generates spiceyness is found in the membranes of peppers, not seeds.

I say the guy in the article is wrong. The Food Network would never lie to me and they say to remove the seeds to reduce heat.

In reply to:

CAPSAICIN
One of the several organic nitrogen compounds in a pungent lipid group called capsaicinoids. These compounds are concentrated in the placenta of the pepper (blister like sacs along the pepper's inner wall) to which the seeds are attached. A smaller amount is found in the veins or white lines running from the top of the pepper to the bottom. The seeds contain only a small portion of capsaicin. So, contrary to popular belief, the seeds are not the hottest part.

For serious pepper connoisseurs, there is a simple taste test that measures the tongue-scorching capsaicin content of these fruits. The highest capsaicin concentration is found in the placental region where the seeds are attached.

In reply to:

Capsaicinoids are found primarily in the pepper's placenta--the white "ribs" that run down the middle and along the sides of a pepper. Since the seeds are in such close contact with the ribs, they are also often hot. In the rest of the vegetable, capsaicinoids are unevenly distributed throughout the flesh, so it is likely that one part of the same pepper may be hotter ot milder than another.

the capsaicin may be found near the seeds but they are not in the seeds, @ least not in significant quantities. if you remove the seeds from a pepper, you do virtually nothing to cool it down. the idea that seeds determine the "hotness" of a pepper is a myth.

It's grilling season. This needs to stay near the top.
